About Oni Ramen House

CHEF FRANK CAPONI WORKED AS A SOUS CHEF FOR OVER SIX YEARS IN PRINCETON, NJ. FRANK’S LOVE FOR RAMEN BEGAN WHEN HE FIRST TRAVELED TO JAPAN 8 YEARS AGO.  HE RETURNED 4 YEARS LATER TO IMMERSE HIMSELF IN THE JAPANESE CULTURE & TO STUDY RAMEN WHICH LED HIM TO OPEN ONI RAMEN HOUSE.

IN JAPAN HE MET KEIZO SHIMAMATO, INVENTOR OF THE RAMEN BURGER & OWNER OF GO RAMEN IN QUEENS. KEIZO HAS BEEN A BIG INFLUENCE ON FRANK’S CULINARY CAREER & HAS INSPIRED HIM TO FOLLOW HIS PASSION FOR RAMEN.

FRANK BELIEVES IN SUPPORTING LOCAL FARMS/VENDORS & STRIVES TO HAVE ORGANIC ITEMS ON THE MENU WHENEVER POSSIBLE.
